Veggie Taco

Ingredients:

Taco shells
Thinly sliced onions
Thinly sliced capsicum
Olives
Guacamole (avocado salsa)
Sour cream
Lettuce
Salt & pepper

Method:

Fry onions & capsicum with salt & pepper.
Assemble all the items, take the taco shells add onion-capsicum, olives, guacamole, sour cream & finally lettuce. Serve with tobassco.

Babycorn Masala

Ingredients:

Baby corn - 1 tin
Onions - 1 medium sized
Tomato- 1 medium sized
Capsicum - 1/2
Cashew nut - 8-10
Coriander powder- 1/2 tsp
Cumin powder- 1/2 tsp
Red chili powder-1/2 tsp
Kasoori methi-1/4 tsp
Milk- 1/2 cup
Turmeric powder- 1/4 tsp
Garam masala powder- 1/4 tsp
Ketchup- 1/4 tsp
Cumin seeds- 1/4 tsp
Salt to taste
Oil- 1 tbsp

Method:

Heat oil add onions & fry till they are golden brown.Add tomatoes & saute it for another 5 mins.
Grind the sauteed onion & tomato along with all the powders, kasoori methi, ketchup & cashew nut into a smooth paste.
Chop baby corn in desired shape & cook it in a pan with salt & water till they are soft & drain water.
In a kadai heat oil add cumin seeds when they splutter add some chopped onion & capsicum when they are cooked well add the ground masala & saute.
Add baby corn & some salt & cook for another 10 mins in a medium flame.Add milk & turn off the flame.
Serve hot with Chapati or ghee rice.

Pepper Chicken Masala


Ingredients:

Chicken - 500 gms 
Onion     - 2 medium
Cumin    -1/2 tbsp
Fennel seeds pwd- 1/4 tbsp                           Mustard  - 1 tsp
Ginger garlic paste - 1/4 tbsp
Turmeric pwd - 1 tsp
Red chilly pwd - 1 tbsp
Freshly ground pepper - 1 tbsp                     Tomato - 2 medium
Cinnamon stick
Garam masala pwd - 1/2 tbsp
1/2 squeezed lemon
Salt to taste
Oil
Cilantro leaves (garnish)


Method:

Wash and chop chicken to small pieces. Heat oil in a fry pan.Add chicken and brown in oil
Remove and add chopped onion.Sauté until golden.Add cumin and mustard seeds when it crackle.
Add ginger garlic paste and sauté for a minute.Add turmeric, red chilly pwd, fennel pwd and stir.
Make sure there is enough oil, so that nothing sticks. Stir for a minute.
Now add chopped tomatoes. Sauté until it is cooked.
Add chicken pieces, salt, water and cinnamon stick.Cover and simmer until the chicken is tender.
Sprinkle garam masala pwd and freshly ground pepper pwd.
Remove from flame. Add a tsp of lemon juice and mix well. Garnish with coriander leaves.

Poori with vegetable kurma


Ingredients:
2  cups chopped mixed vegetables 
1 medium onion (chopped)
2 tsp chilli powder
2 medium tomatoes (chopped)
1 tsp haldi
1 tsp coriander powder
1 tsp garam masala
2 garlic 
1 inch ginger grated
2 sticks of cinnamon 
2cloves
1 cup coconut milk
1 tsp mustard seeds
Curry leaves
Coriander leaves (for garnish)
Salt 
Ghee

Method:

Cook the vegetables in little salted water.
In a kadai heat ghee and add mustard, curry leaves, cinnamon, and cloves
Add the finely chopped garlic, onion and sauté until the onion turns transparent.
Add the chopped tomatoes, salt and stir it.
Add turmeric, salt, coriander powder, and chilli powder mix well.
Add all the boiled vegetables garam masala to this mixture and stir well for about 2 mins.
Finally add the coconut milk, tamarind paste, salt, grated ginger. Cover it with a lid and stir in between let it cook until everything is blended well for around 15-20 minutes.
Garnish with coriander leaves.

Strawberry Crepes


Ingredients

  • 1 cup all-purpose flour
  • 2 eggs
  • 1/2 cup milk
  • 1/2 cup water
  • 1/4 teaspoon salt
  • 2 tablespoons butter, melted
  • 1 cup of fresh strawberries
  • 1 tbsp powdered sugar
  • 1 tsp nutella

Method:
In a large mixing bowl, whisk together the flour and the eggs. Gradually add in the milk and water, stirring to combine. 
Add the salt and butter; beat until smooth.Heat a lightly oiled griddle or frying pan over medium high heat.
Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each crepe. Tilt the pan with a circular motion so that the batter coats the surface evenly.
Cook the crepe for about 2 minutes, until the bottom is light brown. Loosen with a spatula, turn and cook the other side. 
Dust powdered sugar on top then add cut strawberries in between & apply a tsp of nutella on the edge of the crepes
& enjoy!!!

Thai Pineapple Chicken fried rice

Ingredients:

500 gms chicken pieces
1 cup pineapple
1 small cup green peas
1 small cup carrots
1 small cup capsicum
1 onion
1 cup coconut milk
1 tbsp thai red chili paste
3-4 green chilies (optional)
1.5 cup of rice
1 tbsp soy sauce
1 tsp vinegar
2 eggs
Salt
Oil
Fried cashew (for garnish)

Method:

Heat oil add onion fry till golden brown.
Add all the vegetables & cook is well for about 10 mins.
Add well beaten egg & scramble it.
Add chicken & coconut milk & cook it till chicken get tender (15-20 mins)
When chicken is tender add salt, soy sauce, vinegar & thai red chili paste & cook it for a 5 mins then add pineapple.
Add rice immediately & toss it well. Mix it well with the gravy.

PS: You can add any vegetables of your wish babycorn, basil, bamboo shoots are all good add ons.

Mutter Paneer

Ingredients :

1 cup Mutter (green peas)
1 cup paneer cubes
1 tsp cumin seeds
1 big onion
2 tomatoes
1/2 tbsp coriander powder
1/2 tbsp cumin powder
1 tbsp garam masala powder
1 tbsp fresh cream ( Milk is a good substitute)
Coriander leaves (for garnish)
Salt
Oil

Method :

 Heat oil add cumin when they splutter add onion & fry till they are golden brown.
Add tomatoes & all the spices along with green peas. Add little water & cook in medium flame for about
5-10 mins, till the green peas is cooked.
Meanwhile fry paneer in a tsp of oil or ghee.
When peas is cooked add paneer & salt . Finally lower the flame add cream & garnish with coriander leaves.

Hot & Sour Soup

Ingredients:

2 cups chicken stock
1 tsp green chili sauce
1 tsp red chili sauce
1 tsp ketchup
1 tsp pepper
1 tbs sugar
1/4 cup finely chopped carrots, capsicum, cabbage, peas, spring onions (any veggies of ur preference)
1/2 tbs cornflour
Salt

Method

Heat chicken stock & boil all the veggies in the stock.
After the veggies are boiled, add all the above mentioned sauce & other ingredients except cornflour.
If you are using chicken stock kindly add less salt.
Dilute cornflour with water & add it to the soup.
Serve it hot.

PS: If you are a vegetarian you can use vegetable stock or water.
